Dark chocolate mousse with piment d’Espelette Masque

Ingrédients

For 4 people :

  • 250 g dark chocolate
  • 6 eggs
  • 200 g sugar
  • 2 tablespoons strong coffee
  • 1 tablespoon cocoa
  • 1 teaspoon piment d’Espelette
  • 2 sheets of gelatin

Break the chocolate into small pieces and melt in double boiler, add strong coffee, cocoa and stir until smooth, add the Espelette pepper, mix well.

Break 6 eggs, separated whites and yolks. Work yolks with sugar until pale. Combine this mixture with the chocolate and softened leaves of gelatin. Beat the egg whites (firm) and gently fod in the chocolate cream.
