Ingrédients

For 4 people:

  • 36 St Jacques
  • 24 cherry tomatoes 20 g parsley 20 g basil
  • 20 g 15 g arugula mint
  • 12 C. olive oil
  • C. 5 tablespoons water 1 clove garlic
  • 1/2 lime
  • 1 C. coffee balsamic vinegar
  • Salt / pepper

Prepare the green sauce: mix the parsley, arugula, basil, mint and garlic; pour olive oil in a stream, add the vinegar and water. Adjust seasoning and reserve in the fridge until ready to serve.

Rotate on a skewer, 3 St Jacques and 2 cherry tomatoes and sear 8 minutes on a grill (oiled) or barbecue. Allow 3 skewers per person. When serving, season with salt and pepper and add a dash of lime, place on a serving dish in the accompanying sauce … It’s ready
