Tatin apricot and saffron Masque


For 4 people :

  • 250g puff pastry (or broken)
  • 800 g apricots
  • Sugar 150 g
  • 125 g of butter
  • 4 pinches of saffron threads
  • Vanilla ice cream or whipped cream (to accompany)

Preheat oven to 180°C. Wash apricots or use apricots in syrup, cut into thick slices.


Melt 100g butter in a pan then pour 100 g of sugar. Positioned horizontally washers apricots, cook for 10 minutes so they caramelize. Sprinkle 4 tart pans remaining sugar and add a knob of butter, melt it in the oven then place rosette pre-caramelized and put a pinch of saffron apricots and cook 5 minutes. Meanwhile, roll out the dough and cut different diameter discs than those tarts. Cover apricots with dough, dragging the edges to the inside of the molds. Leave the oven until the dough is cooked.


Remove the tart from the oven, let stand 5 minutes, then return a gesture franc on serving plates.

Enjoy it hot or warm.
