Put to one side once cooked.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">2\/ <strong>Organic poached egg<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Poach the eggs in boiling water one at a time for around 2 minutes (you can touch them and check the cooking time).<\/li>\n\n\n\n<li>Put to one side.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">3\/ <strong>Pan-fried foie gras<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Choose a deveined foie gras extra.<\/li>\n\n\n\n<li>Cut into 1cm thick slices.<\/li>\n\n\n\n<li>Quickly sear the foie gras in a very hot pan.<\/li>\n\n\n\n<li>Toast the bread and top with the foie gras.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">4\/ <strong>Plating<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the mushroom cream to a deep bowl followed by egg, mushrooms and pan-fried foie gras.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>By Chef Vincent, Quai Cyrano<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Chef tips<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>For best results, add white wine vinegar to the water when poaching the egg so the white sets around the yolk or make a whirlpool before you add the egg.<\/li>\n\n\n\n<li>Clean your mushrooms with a brush instead of water to avoid them soaking up all the water.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>1\/ Mushroom cream 2\/ Organic poached egg 3\/ Pan-fried foie gras 4\/ Plating Add the mushroom cream to a deep bowl followed by egg, mushrooms and pan-fried foie gras.
