Vins de Bergerac et Duras

Saltimbocca-style veal skewers

To be enjoyed with :

Bergerac blanc sec | Bergerac rosé | Côtes de Duras blanc sec | Côtes de Duras rosé | Montravel blanc sec

1/ Finely slice vegetables. Drizzle with lemon juice.

Mince garlic in press and add to vegetables. Season. Drizzle with olive oil.

Marinate for 6-12 hours.

2/ Slice strips of veal lengthwise. Season.

3/ Add veal, a sage leaf and marinated vegetables (fresh or tinned) and repeat on your skewers.

4/ Brown skewers on the grill, griddle pan or very hot pan for 30 seconds to a few minutes on each side depending on your cooking method.


Serves 4

  • 4 veal escalopes
  • Sage leaves
  • Salt, pepper
  • Needle and thread
  • Courgette, aubergine, cherry tomato, poivrade artichokes, mild chilli powder
  • Lemon juice
  • Olive oil
  • 2 garlic cloves
