1/ Finely slice vegetables. Drizzle with lemon juice.
Mince garlic in press and add to vegetables. Season. Drizzle with olive oil.
Marinate for 6-12 hours.
2/ Slice strips of veal lengthwise. Season.
3/ Add veal, a sage leaf and marinated vegetables (fresh or tinned) and repeat on your skewers.
4/ Brown skewers on the grill, griddle pan or very hot pan for 30 seconds to a few minutes on each side depending on your cooking method.
